Lobster Place's Spicy Scallop Roll

Delight your tastebuds with Lobster Place’s Spicy Scallop Roll. Freshly poached scallops are tossed in a tangy, spicy sauce, layered over crisp shredded cabbage, and served in a golden toasted bun. Bursting with flavor, this isn't your traditional seafood roll but a bold new twist you won't be able to resist!
Ingredients:
Makes 6 rolls
1 lb fresh sea scallops
8 oz mayo
4 Tablespoons spicy chili crisp (use your favorite brand, we like Lao Gan Ma brand)
2 Tablespoons fresh lemon juice
¼ Cup sliced scallions
1 Cup shredded cabbage (sliced as thin as possible)
1 teaspoon black lava salt (can sub with Maldon Salt)
1 teaspoon kosher salt + 6 Tablespoons kosher salt for pot of water
6 top-split hot dog buns (can sub with regular hot dog buns if you can't find the New England style buns)
2 Tablespoons butter
Directions:
Bring a medium pot of salted water to a boil, add scallops, and reduce heat to low.
Poach scallops in the water for about 3 minutes, then remove and allow to cool in refrigerator for 30 minutes.
Remove from refrigerator and cut each scallop into 8 pieces
Add scallops to a medium bowl, and add mayo, chili crisp, scallions, lemon juice, and a sprinkle of kosher salt. Mix until thoroughly combined and reserve
Add butter to a large saute pan over low heat. Toast both sides of the buns.
Divide the shredded cabbage between each of the 6 buns, then fill buns with scallop mix. Finish with some sliced scallions and sprinkle of lava salt over top.
