PEACH & TOMATO SALAD WITH SWEET BASIL VINAIGRETTE

Beer purveyors, Mayhem, share a sweet summer staple from their table
Ingredients:
2 Heirloom Tomato
2 Peaches
6 Basil Leaves
1 tsp Kosher Salt
1 tsp Sugar
1/8c White Vinegar
1/4c Olive Oil
Directions:
Cut the tomato into big chunks, about 1-1.5 inch each. Mix with salt and toss.
Cut peaches in similar sizes.
Drain liquid from tomato and add peaches to bowl.
In separate bowl, add basil leaves and sugar. Rub together vigorously.
Add vinegar, and slowly whisk in olive oil.
Toss vinaigrette with peaches and tomato.
Tips:
Best after sitting for a day in the fridge. Keeps for 2 days.
