In this demo class, Aldo & Adrianna will answer all your beefy questions as they takes you on a tour (and a tasting!) from nose (well really neck) to tail while breaking down a whole side of beef. In addition to going over all of the cuts that come off of a steer, we’ll talk about livestock agriculture by comparing small-scale farming with industrial commodity meat. You’ll also pick up tips on how to shop smart for meat in general as well as pointers on the ideal cooking methods for each cut mentioned.
